Grilled Thanksgiving Turkey


Ingredients

  • 12 cups water

  • 1 cup kosher salt

  • 2 cups brown sugar

  • 1 cup apple cider vinegar

  • 2 tablespoons sage

  • 2 tablespoons thyme

  • 2 tablespoons rosemary

  • 1 tablespoon pepper

  • 4 cloves garlic

  • Lemon slices

  • 4 cups ice

Instructions

  1. Boil 4 cups of water. Add salt and brown sugar. Stir until the sugar has completely dissolved. Turn off the heat and add garlic, sage, rosemary, thyme and pepper.

  2. In a large bucket, add 8 cups of cold water. Pour in the contents of the sauce pan, apple cider vinegar, ice, and lemon slices.

  3. Rinse the outside and inside of a thawed turkey. Pat the turkey dry. Completely submerge the turkey in bucket and cover with a lid. Allow the turkey to marinate for 12 hours for a smaller turkey and up to a full day.

  4. Preheat grill to 400 degrees.

  5. Remove from brine and pat dry. Place in a tin foil pan. Add salt and pepper to the outside of the turkey. Cover, place on grill with thermometer.

  6. Cook for 2 hours, then remove cover. Cook uncovered for remaining time (depending on size of turkey).

  7. Enjoy!
