3 chicken breasts
1 tablespoon olive oil
½ red pepper
2 gloves garlic minced
8 ounces cream cheese softened
¼ cup shredded cheddar
1/4 teaspoon salt
8 slices bacon
Preheat grill to 375 degrees.
Use a sharp knife slice chicken breast into strips. Set aside.
Sautee onion, red pepper, and garlic.
Once softened, add to cream cheese. Add in salt, and cheddar cheese.
Cut jalapenos in half and remove membrane and seed. Stuff the jalapenos with cream cheese mixture. Place a strip of chicken over the top of the halved jalapeno.
Wrap bacon around the chicken breast and jalapeno to seal the cream cheese mixture in.
Grill for 25 minutes or until the chicken and bacon are cooked through.
