2 tbsp Cilantro
8-10 Corn on the cob
1 cup Cotija or feta cheese
1 tbsp Chili powder
2 tbsp Salt and pepper
2 tbsp butter
Preheat the grill to 350.
Remove husks from corn, butter each liberally.
Lightly salt and pepper them.
Place on the grill turning every 5 minutes until charred.
Remove from grill.
Cut corn off the cob, and place in a bowl.
Add lime juice, cilantro, cotija cheese, chili powder, salt, and pepper.
Stir and taste, add more salt and pepper accordingly.
Serve and enjoy!
