Mexican Corn off the Cob


Ingredients:

2 tbsp Cilantro

2 Limes

8-10 Corn on the cob

1 cup Cotija or feta cheese

1 tbsp Chili powder

2 tbsp Salt and pepper

2 tbsp butter

Instructions:

  1. Preheat the grill to 350.

  2. Remove husks from corn, butter each liberally.

  3. Lightly salt and pepper them.

  4. Place on the grill turning every 5 minutes until charred.

  5. Remove from grill.

  6. Cut corn off the cob, and place in a bowl.

  7. Add lime juice, cilantro, cotija cheese, chili powder, salt, and pepper.

  8. Stir and taste, add more salt and pepper accordingly.

  9. Serve and enjoy!
